By default, you don't have all the documentation for XCode locally.  You have to subscribe to it to download it to your machine.  Some of it is a little large, so you may only want to grab what you need.

If you go into XCode and then go to Help -> Documentation, you will see all the DOC SETS on the left have SUBSCRIBE buttons next to them.  Hit one and wait a long time while it downloads:
